  • 250 g plain flour (or spelt flour for a healthier option)
  • 1 sachet baking powder
  • half a teaspoon of bicarbonate of soda
  • a pinch of salt
  • a teaspoon of vanilla extract
  • optional: a teaspoon of cinnamon or cocoa for a more intense flavour

For the chocolate glaze:

  • 150 g quality dark chocolate (minimum 60% cocoa)
  • 3 tablespoons of coconut oil or butter

The zucchini does not need to be peeled if it is young and has a thin skin. Grate it coarsely and leave it to sit for a while in a sieve or in a tea towel so that the excess water can drain away. This step is crucial – zucchini that is too wet could affect the consistency of the batter. Simply squeeze it gently with your hands or press it down with a spoon.

Beat the eggs with the sugar until foamy, then add the quark, oil and vanilla extract. Stir the grated zucchini into the mixture. Sift the dry ingredients separately – flour, baking powder, bicarbonate of soda and salt – and gradually add them to the wet mixture. The batter should be thick but pourable, not too stiff.
