Cinnamal, also known as cinnamaldehyde or cinnamyl aldehyde, is an aromatic substance that is naturally found in real cinnamon. It is this substance that is responsible for the typical smell and taste of cinnamon. Cinnamal appears as a yellow liquid and is chemically classified as an unsaturated aldehyde. In scientific terms, it is phenylpropenal. This substance is used in products mainly for its aromatic properties.

In the food industry, cinnamal is used as a natural flavouring to flavour foods and beverages such as sweets, pastries, teas and alcoholic beverages. However, its use is by no means limited to the food industry. Cinnamal, often in combination with other essential oils, is also widely used in perfumery, where it is a component of many perfumes and fragrances. Its fragrance also makes it a popular ingredient in aromatherapy. Last but not least, cinnamal is also an ingredient in some cosmetic and body care products such as shampoos, shower gels, creams and lip balms. It should also be mentioned that cinnamal is sometimes used as a biocidal agent to repel insects, including mosquitoes and bees.
