Calcium carbonate, also known as chalk or limestone and referred to as E170 in the food industry, is one of the least soluble salts in water. This substance is one of the main sources of magnesium for plants and also for animals, including humans. Calcium carbonate forms the basis of many industries where it is used in various forms.

Limestone is primarily used in construction as a building material, but also as a raw material for cement production. Calcium carbonate in the form of chalk is also used in the production of paints and coatings, where it acts as a filler that gives paints and coatings the desired properties such as opacity, whiteness or softness. In addition, chalk is used in the paper industry, for the production of stationery, in the sprinkling of linen or in gymnastics for the treatment of athletes' hands. In the food industry, calcium carbonate is used as an acidity regulator, stabiliser and bleaching agent, especially in bakery products, cheese making or some beverages. For example, in the case of many cheeses, calcium carbonate is used to alter the pH of the environment and thereby influence the ripening process of the cheese. It is also commonly found in some types of chewing gum, where it serves as a filler.
